Opaque Vacuum Packaging and Chilled Storage Improve Quality Retention in Suansun

Opaque, light-shielding vacuum packaging stored at 3 °C in darkness achieved the most favorable quality retention profile for suansun, or Chinese fermented sour bamboo shoots, over a 56-day observation period. In a single-batch 2 × 2 × 2 experiment comparing commercial vacuum-bag system types, storage temperatures, and external illumination, this specific setup maintained an observed day-56 browning degree of 0.24, a nitrite level of 0.18 mg/kg, an aerobic plate count of 2.88 log CFU/g, and a lightness value (L*) of 46.5. The same batch retained a total titratable acidity of 1.58 g lactic acid equivalents per kilogram of fresh sample (g LAE/kg), viable lactic acid bacteria at 6.94 log CFU/g, a hardness of 139.6 N, and a comparative sensory score of 84 out of 100.

These core conditions were identified after evaluating the progressive quality deterioration that suansun undergoes following fermentation, where browning, texture softening, microbial changes, and sensory degradation advance at distinct rates. The study integrated three sequential component experiments addressing package systems, storage environments, and deterioration kinetics prior to the factorial assessment. An initial package-system comparison demonstrated that opaque light-shielding VMPET/PE vacuum packaging preserved quality more consistently across 56 days than transparent PA/PE or non-vacuum alternatives, while the kinetic evaluation revealed accelerated browning-related deterioration at 25 °C compared to 5 °C.

Environmental screening using pasteurized, vacuum-packaged samples additionally pinpointed dark storage at 3 °C alongside approximately 80% external relative humidity as prospective candidate conditions. The authors highlighted that the 80% relative humidity finding originated solely from the preliminary screening experiment rather than the primary factorial matrix. Furthermore, the researchers noted that these findings define candidate parameters strictly for the tested commercial materials and the 56-day evaluation timeframe, without establishing a universal optimum, a validated shelf life, or a food-safety claim.
