Processed food: What Big Food doesn’t want you to know and its critics won’t tell you

Every food decision we make involves a trade-off of some kind. A healthy option might not be the most environmentally-friendly; fresh, local foods might be expensive; products with simple-sounding ingredients may contain more chemicals than ones with unpronounceable lists. Navigating these food decisions is obfuscated by slick advertisements from Big Food and cute phrases from food pundits. This book contends that to promote practices that really help save the earth and reduce obesity, we must look beyond personal beliefs and gut feelings. We can even include a daily dose of processed foods, if we understand their benefits and limitations.
