Perspective Proposes Beetroot Chemistry Framework to Modulate Plant Juice Allergens

A perspective published in npj Science of Food proposes a conceptual framework termed matrix-derived hypoallergenicity, exploring how natural food-matrix chemistry might regulate allergen accessibility in plant-based beverages. Authored by Parisa Mostashari, Motahareh Hashemi Moosavi, Ismail EÅŸ, Reza Hasanzadeh, Amin Mousavi Khaneghah, and colleagues, the perspective examines whether matrix interactions can modify allergen behavior without compromising product characteristics.

The conceptual framework addresses a distinct challenge in beverage processing, where cold-pressed apple, carrot, and celery juices retain native PR-10 allergens associated with Pollen-Food Allergy Syndrome. While conventional thermal processing can alter allergen recognition, heating simultaneously compromises heat-sensitive nutrients and degrades sensory quality.

To investigate non-thermal chemical mechanisms, the authors evaluated beetroot, or Beta vulgaris, as a model matrix. Within this matrix system, they identified and examined two chemically plausible pathways: polyphenol-derived quinone modification and betalamic-acid-mediated carbonyl chemistry.

The authors explicitly note that neither chemical pathway has been validated in authentic juice systems. Accordingly, the perspective establishes a testable framework intended to guide future evaluations of allergen modulation while preserving the nutritional and sensory quality of juices.
